Take Time
Tuesday’s theme is TAKE TIME!Why not take a little bit more time one day to save on time the next? The idea isn’t novel but I am fast becoming a fan. Here is one way that my mom introduced me to saving time…
FREEZER MEALS! This can be very complex, or it can be so EASY! As often as I plan to… haha… which could be more often, I buy extra for one meal and turn it into two. By spending a few minutes longer preparing dinner one night, it allows me to skip prep time all together another!! I absolutely love it! It is perfect for those days when you are burnt out and definitely not in the mood to cook. -Also great for rushed evenings when you need to eat and run.
After a little experiment I have learned which recipes are easy to duplicate. Here are a few suggestions…
Enchiladas
Chicken divan (I always make the rice fresh)
Chicken Viva
Chimichangas
Other things I like to freeze
Cookie dough
Muffins
Hamburger and onion cooked and in meal size portions
Berries (Freeze on a cookie sheet first before putting in bags in order to keep shape. Great for smoothies, desserts, and salads!)
Grated zucchini
cookie dough and muffins! When I am really on the ball I cook up a large amount of hamburger and onion and freeze it in meal size portions.
